Grilled Meats and Street Food!

We kind of love street food. There is just something about the atmosphere of the markets, the realness and the community behind it all. You can always sense the pride in the vendors that work together to provide a meal that can feed the community. The butchers who have honed their cutting skills selling chops to visitors or even other vendors who then turn it around and cook it fresh the best ways they know how. The farmers selling their weekly crops. The cheese maker, bread baker and candy creator. I am just so amazed at how these market stand treats so often become a mainstream food frenzy. (Thinking trendy tacos, bahn mi and ramen, just to name a few . So this week, the Global Kidchen ate dinner in Namibia enjoying a Kapana, Grilled Meats – street food style.

With many of our travels, we dedicate at least one afternoon just to explore the local markets of the area. Saturday’s are made for farmers markets. I love finding new spices to ‘experiment’ with later and tasty treats. (I’m convinced I helped to make burrata so dang trendy) Chris has a fascination with finding new sauces to bring a taste of vacation home with us. The entire top shelf of the fridge is dedicated to these sauces, three different varieties of mustard, and beer – and that’s valuable space when trying to feed two boys and their pack of neighborhood friends.

The Recipe: Kapana (Grilled Meats, Street Food)

*This one is a little more building essentials and alot more done to taste than full on directions!

The Meat: Just a little salt and pepper and grill that steak (chicken, lamb, etc.) just how you like it! When its done, cut it up to bite size, finger food pieces.

The salsa:

2 diced tomatoes, 1 diced sweet onion, 2 tbsp. olive oil, 1 tbsp white vinegar

Finely chop the tomatoes, onions and chilies. Add the oil and vinegar. Stir. You’re done, just like that. After all, this is a meal meant to be cooked quick for a line of hungry market go-ers! You’ve got hungry kids, same concept – hangry… I added chilies after the fact to serve the little people first!

Dipping Seasoning: (Peri-peri)

It’s like the ‘secret sauce’ to this whole recipe. Except is seasoning powders. Just mix all the ingredients together. Adjust it to your spice liking. But you have to use this to dip your hot, grilled meats in for flavor. (I cheated a bit and used this little blend!)
